(Anonymous) 2017-12-16 10:51 pm (UTC)(link)Preheat your oven to 350. Get out a couple of pie plates, a 13x9 glass baking dish, or muffin tins. Oil them.
1 cup flour
1 tsp each baking powder and salt
1 cup grated cheese
3 eggs
1 1/4 cups milk
2 small chopped onions
2 pressed or minced cloves garlic
2 tbs oil
Mix the flour, salt, and baking powder in a bowl, then add the rest of the ingredients and stir just until you don’t see any clumps of dry flour. Divide between two pie plates, or dump in the baking dish, or divide between as many muffin tins as it takes to use up.
Stick in the oven until the edges are starting to brown and the middle has puffed a bit, around 20-35 minutes if you’re using pie plates. This reheats well and can be eaten warm or at room temperature, and made in big muffin tins, each one is a serving, more or less. I’ve never tried it in mini muffin tins as finger food.
You can swap out an onion, or both of them, for pretty much any veggies (or I guess cooked meat, although I’ve never tried it since I don’t eat it.). I’ve used tons of different kinds of cheese, even cottage cheese, or mixes of odds and ends of different cheeses. The ratios in this are forgiving as fuck, too, although maybe don’t play with the baking powder since too much will make anything taste metallic and bitter. Chopped fresh herbs are awesome in this.
