Make sushi rice (white rice, short grain or medium will work if you can't find short, with rice vinegar, salt, and sugar) and let it cool. My simple veggie mix is frying up lentils and some minced green veggie in soy sauce (I usually buy pre-minced cauliflower and broccili). Let it cool, add a few chopped scallions and sesame seeds for extra flavor, then mix it in with the sushi rice. Using plastic wrap, make your riceballs. If you like nori, you can wrap the riceball in that. Keep in plastic wrap and put in fridge if you can wait, because that'll help it keep the shape.
You can also just make vegetarian sushi if you can do the sushi rice. It's not hard at all. Once the rice has cooled, take your nori sheet, add rice, and then your ingredients. I usually go for avocado and cucumber, or alternatively, tamago. (Making tamagoyaki is also not tough, it's just a sweet omelette cooked in thin layers).
I'm also a pizza lover. I guess it's not really cooking, but I buy pizza crusts, and add my own sauce and ingredients (usually the aforementioned chopped peppers and onions, plus black olives). I like loading it on with as many veggie toppings as possible.
