A lot of breakfast foods are/can be vegetarian! Eggs especially are fantastic. Scrambled, fried, on toast, poached, egg sandwich with cheese, poached with avocado, ala goldenrod, hardboiled, pickled with beets, tea eggs, just go wild.

And of course biscuits, waffles, pancakes, grits, cream of wheat, hashbrowns, and so on.

Mexican food is also good, I add taco seasoning to canned black beans and the very basic taco bowl is - corn tortilla, beans, cheddar cheese, queso fresco, another corn tortilla and repeat until I've got a delicious 'lasagna'. But I'll also add guac, refried beans, sour cream, whatever.

Thank you, all awesome ideas. I don't eat a lot of bread so I generally have hard boiled eggs in a spinach and citrus salad (spinach, squirt of fresh lemon juice, sliced mini oranges, chopped bell peppers, diced cucumber, can also add sliced apples, mature cheddar, nuts or seeds if you have them, two sliced boiled eggs) which is super tasty if you've never tried it.
