Pick up with Season 4, the start explains where everyone is. The Ghost Rider stuff is fun, but then there's a terrific AU in the second half of the season.

I thought about doing this because I really like Ghost Rider, but I never made it through season one even and wasn't sure if I could just jump into season 4.

Yes, you can jump right in. They reset a lot of stuff each season as the movie status quo changes, so they explain it pretty well.
