Half the time I end up shipping the "incest" ship because their relationship is written exactly the way I want my romantic ships to be (years of being together leading to realization and pining? gets me, EVERYTIME, dammit), but a lot of the romantic ships available just don't have that chemistry. I don't ship them cause they're siblings, I ship them because I like their interactions, being siblings is either extra spice or a minor roadblock. So. Fluff!

Yeah, same. I ship a ton of sibling pairings, but them being siblings isn't the reason why I ship it, it's because siblings are frequently written with the dynamic I want in a romance, and actual canon romance ships are pretty much never written that way.

This, but I'm also extremely adverse to being told they're canon/going to be canon/secretly canon/whatever. It's an instant ship-boner kill. I did a secret about it earlier, incest is one of the few places I can get m/f ships because 'it's canon!' screamers are so rare.

This is an interesting point and an upside to incest shipping I hadn't thought of before. I think it is valid for m/m ships too, as there's very little 'it's canon!' screaming around where I put up my (incesty) fandom tent.
