I've played through ME1 and 2 several times, ME3 once. All the other times I save and end the game after the Citadel DLC, so the series will never be truly over for me. How sad is that?

I only played ME3 twice: once for my female Shep, and another one for the male Shep. Chose two different endings, and that's that. Also played ME1, 2, and 3 up to the last missions, a few times over. But I can't bring myself to finish 3 again. So if that's sad, I'm the saddest one around. :P
