Changing a character's sexuality or primary relationships likely changes a great deal about the universe shown to us.

I'll concede that Dean and Castiel fucking is likely not an AU by the standards of tagging conventions used on AO3. But that's not the point. The point is that Dean/Castiel is an exercise in making shit up, and having fun with creative derivative work doesn't depend on justifying its relationship to canon.
