Have you never had pistachio pudding or baklava or pistachio pound cake? If not, they are all pretty good. Are you just thinking of them salted? Some nuts do have a little more sweetness to them, but I mostly think of their flavor as nutty. Though, I guess even if I did think of them as savory, that wouldn't rule out their use in desserts for me. I've used things like pretzels, bacon, chips, and crackers in desserts. I'd say the least likely nut to be used in a dessert would probably be brazil nuts and I've seen some recipes.
