Not in the fandom per se, so I'm genuinely confused - why were they surprised that a character called Guinevere was the end game romance?

I don't think anyone was surprised, per se. It was more that the TV show had taken so many liberties with Arthurian mythology already, so there was the possibility in some fans' minds that Arthur/Guinevere might not be the end game romance. With a further division among that group of fans between the ones who didn't necessarily expect the pairing but liked it in canon, and the ones who didn't necessarily expect the pairing and disliked it in canon.
