I'm definitely not a fan of using salmon in it, but the basic underlying concept of terrines and aspic is something I'm definitely on board with.

IDK, I can definitely understand how the texture of aspic would be offputting to some people, but I really enjoy it, and the contrast between aspic and some really flavorful pork is very enjoyable as well.

Yeah, it is very much a texture thing to me. I'm pretty sensitive to food textures, though (lots of things I like raw, I don't liked cooked and vice versa, beyond the taste differences).

I'm guessing that the texture works for you and juxtaposition of the textures also gives it something unique.

I think it's just something that.... either you grew up with that sort of food and think it's normal/tasty. Or else you didn't grow up with it and it's fucking weird and gross. Like eating bugs, or pig feet, or tongue, or any other "weird" food.
