Tau are a little dull, yeah. And Dark Eldar too, but I like the regular variety a lot - they're also kinda tired and familiar but it's a familiar thing that I like a lot, so.

I have a soft spot for the Eldar as well. Helps that I love the Harlequin as a motif, and that one of the first bits of their fluff I read about was Maugan Ra. Cegorach and Ynnead are also very cool. The fallen race on their last legs fighting to preserve some tiny piece of themselves, not only in this life but the afterlife, is an old but good plotline.

The Eldar/Dark Eldar have always felt very Moorcock-y and Elric-ish, which is something that I appreciate a lot. There's just a lot of cool aesthetic stuff there. In addition to the insane, over the top 40k stuff. It's a nice balance.
