You should give 'Red as Blood, or Tales from the Sisters Grimmer' by Tanith Lee a try. A whole new take on several fairy tales, and Little Red Riding Hood is one of them.

It's an old book, so try a used/out of print site like Better World Books to find a copy.

Aren't there lots of takes on this?

Literature: Le Petit Chaperon Rouge (1697), Little Red Riding Hood (2007), Scarlet (2013)

It certainly comes to mind when people talk about fairy tales for me, but I don't particularly like the symbolism of this particular tale.

And if you’re into M/M fantasy fiction, I highly recommend the “Scarlet and the White wolf” series by Kirby Crowe, which is loosely based on the story and has tons of interesting world-building.
