I was sitting here thinking "What the hell is a hand pie?" I need a brain.

To be slightly more helpful, I used to make pie in a yeast crust. It made sort of freeform pie I would bake on a cookie sheet. It was less tricky to work with than a regular crust and worked well for sweet and savory pies. I don't have the recipe anymore unfortunately (I got it out of the Vegetarian Times many many years ago) but I'm sure there are still recipes out there.
