It could be interesting but you'd have to do a lot of research - or at least, I would only be interested personally if there was a lot of research. I think it'd be pretty easy to fall into a Percy Jacksonesque approach to mythology, and that's been done a lot at this point. But something that really tried to look at actual ancient Roman religion in practice as opposed to mythology would be really cool.
