Sometimes, but my favorite ships are the ones that don't change anyway.

There's a lot of ships I kinda dislike that I would love if they were f/f instead

I can maybe see the female half of one of my het ships as a guy, but she does spend some time lamenting the opportunities she lacks because of her gender. And the male half gets badly fucked over by toxic masculinity/his supposed lack of masculine qualities in ways that shape his character. I could maybe see him as a trans guy, but not as a cis woman.

Often. I RP it with my wife. Usually making straight ships into lesbians, because there's never enough lesbians for us.
