Have you watched anything outside of the prequels (like the Clone Wars animated show, Rebels, or the new movies)?

No, but I read the novelization about him. The only Star Wars novel I have ever read. I don't remember a lot about it. Just that I enjoyed it and it had Darth Maul's face on the cover. That is why I picked it up.

Well, if you ever were interested in having more content for Maul, he does show up (quite a lot) in some of the cartoons. They're generally considered very good episodes.
