specifically that one, as opposed to all the other stories that make up the gigantic "power is seductive and corrupts" theme that's been around since ancient times?

How many of those other stories have been made into blockbuster film franchises and entered into pop culture the way LOTR has? I'm not even sure why you're questioning how come OP mentions Frodo instead of other examples, but I'm guessing it's partly because in Iron Fist, Danny and Colleen specifically talk about passing the power of the IF onto her, because Danny feels it's corrupting him and that Colleen is more worthy of it. That's definitely got shades of Tolkien in it.
