I hated how she didn't serve any real purpose on the station. It would have been much better if they had just shown the symbiote getting transferred into a new body and then moving on to a new life somewhere else. The Trills weren't supposed to continue their previous hosts' lives.

She wasn't, but it was more of an emergency situation, I guess? If Ezri hadn't taken Dax, it might have died with Jadzia.

True. But Ezri was a counselor. As written her role wasn't really needed on DS9 and there wasn't a good reason for her to end up staying there given Trill insistence on leaving old lives behind and the needs/nature of DS9. I know they wanted to write the anti-Jadzia, but the way they wrote Ezri just didn't work.

oh, I agree. She didn't really work for me either. I liked some of the resolution with Worf, but the Bashir stuff was ... nope.

(Though mirrorverse!Ezri was fun.)

I don't think Ezri's storyline was brilliantly written, but there is definitely a need for counselling on DS9 (and in fact the episode where she was trying to provide therapy for Garak was one of the strongest ones). It's a large, fairly remote community, and traumatic stuff happens fairly frequently because they're only not on the edge of a war zone when they're right in the middle of it.
