Well, there's this small, pesky thing called characterization that can get in the way of the most carefully planed plot, because no, this character won't take path A no matter how much I want that character to do it.

Also, characterization can grow during the story, so even if at the start path A was perfectly IC, by the time the story gets there the only path for the character is B.

ye. i'm not much of a writer, but as a roleplayer saying/doing certain things sometimes just does not feel right and i'll have to wrack my brains trying to find different ways to get desired outcomes.

it's funny but i'm the complete opposite from op, i feel kinda judgey towards someone who says they absolutely can't relate to not having the story go exactly the way they want? it reminds me of the pre-written epilogue of harry potter.
yes, we all can put down the words and make the characters do everything we want, nothing is stopping us, but that's not the point! the point is that sometimes you wouldn't be writing coherent characters.

Heck, my friend and I still joke about our RP characters shipping themselves because neither one of us had planned for them to get into ANY sort of ship whatsoever, much less with each other. But then we had them interact and there was such a spark there in their very first meeting that we decided to just roll with it and see where things went.

They eventually ended up getting married, much to both of our surprise and amusement. We did not plan for that at all, it was just something that happened organically out of their interactions.
