You can break them up into two pretty basic methods of cooking. Foods that are grilled are cooked quickly through direct contact with heat or a heated grill (hamburgers, hot dogs, sometimes chicken), and things that are BBQ'd are cooked slowly for a long time using indirect heat, often smoke (pulled pork, ribs, burnt ends, sometimes chicken, a bunch of other things).

There's a ton of different variations within each category but it's a pretty basic and fundamental distinction.
