It mainly just started for two reasons - 1) He looked kinda cool and 2) the way Vader interacted with him in Empire Strikes Back gave the subtle implication that he was a badass and that the two had some prior history ("No disintegrations!").

Vader treats Fett with the kind of professionalism and respect that is only matched in the series by the way that he behaved around Moff Tarkin.

From Vader's words, Fett has apparently disobeyed or not quite met Vader's demands for a bounty before... and not only did he survive the encounter but also impressed Vader to the point that he has been hired once again. Even when Fett questions him in the carbon freezing chamber about freezing Han (potentially costing him the bounty), instead of threatening him or dismissing his concerns, Vader offers fair compensation. Contrast that with his treatment of his own officers, or with Lando.
