(Anonymous) 2018-12-08 03:14 am (UTC)(link)* Because some prime cuts like ribeye, porterhouse, etc. are better suited to medium rare (at most) and they feel it's a waste of a good piece of steak to cook it further.
* Because ordering a steak well done is, unfortunately, something that's common in unadventurous, uncultured diners and this is a red flag that they might be a problem customer.
Obviously by all means people should order what they prefer. But chefs do have legit reasons for why they cringe when someone orders a well done steak.
