Raw sea urchin. Sushi in general, really. I prefer the kinds with raw fish, not the most popular varieties that tend to be cooked ingredients in a roll with mayonnaise and other sauces squirted all over the top.

Hmm, having worked in a sushi shop in America, I don't think the most popular sushi are the ones without raw fish. California roll may be "starter sushi" for people not yet used to it, and since it's the cheapest besides cucumber/vegetarian rolls people will order it for a side, but I'd say anything raw salmon or raw tuna was the most popular in my experience. For nigiri especially.

Sea urchin was not the most popular, though!

NAYRT but would you say, in general, nigiri or rolls are more popular? I always got the sense that rolls were significantly more popular.

Absolutely rolls are more popular. People do order nigiri, but mostly just those who are "hardcore" sushi eaters, or if the nigiri comes in a set plate alongside a roll. Sashimi got orders from the low-carb folks, though often in the form of our sashimi salad. Overall, though, I think when Americans think of going out to get sushi, they are thinking of rolls.

I'm from Vancouver. Sushi is popular af here, and also really cheap compared to a lot of other places. People do order nigiri quite often here, and not just the "hardcore" people (or else we're just all hardcore sushi eaters in Vancouver, lol). However, I think the price is still a deterrent for people, which is why people still favor rolls, even when they like nigiri. I can usually get eight pieces of Cali roll, spicy tuna roll, or BC roll for $4 or less, but usually a single piece of salmon or tuna nigiri is about $2, and if you want eel or chopped scallop or something it's a good $3+.

When I go through yelp pictures, I tend to find myself thinking, "Has money" whenever I see orders that are mostly nigiri.

I think another reason why people tend to get rolls more often is because they're easier to eat.

This is me. I prefer nigiri vs roll style for health reasons but I can only really afford the latter

I agree with this. A Cali roll can be nice sometimes, especially if you're trying to keep your bill down, but it's the special rolls people tend to go for once they're used to sushi.

Might be a regional thing. In the Midwest, "crazy" rolls that focus more on cooked ingredients with various toppings is very popular.

I agree, it's disgusting. And I like mayonnaise, just not on sushi and not drizzled on top all over the place.

Mayo on sushi is icky, I agree, unless it's a drizzle of that spicy mayo stuff. Normal mayo though, yuck - actually, I see that way more often in Japan than I do the US.

Yeah, I don't think Americans realize that mayo in Japan is a pretty common condiment.

Same, tbh. Cooked + mayo is fucking gross. Every once in a blue moon a spicy roll with tempura prawns is nice but yeah, give me sake, maguro, ebi, tamago, and tako nigiri.
