Depending on your feelings on puppets, Thunderbolt Fantasy is fantastically batshit. Basically Gen Urobuchi saw some amazing Taiwanese puppetry and decided to make his own puppet show and it's delightfully over the top fun.

If you don't mind idol anime, Zombieland Saga was one of my favorites this season. Basically what if idols but also zombies. Very silly, very fun, a lot of heart and Mamoru Miyano giving one of his most Mamoru Miyano-ish performances ever.

Golden Kamuy was really fun as long as you can stomach animals getting killed (the series is very rooted in Ainu culture,so there's a lot of hunting and appreciating the meat of what you just killed) and an ending that is very very 'now go read the manga.' It's a great adventure story, kinda pulpy and with a slightly warped sense of humor that just works somehow.

It's not starting until next month, but if you haven't read the manga of The Promised Neverland I highly recommend checking out the anime adaptation coming out. It'll be simulcasted on Crunchyroll and it's probably the biggest 'up and comer' currently in Shounen Jump.
