How about - banana bread, pumpkin bread, zucchini bread?
Spice cake, apple cake, lemon cake.

(I"m hungry, damn.)

These are all easy things to make, and especially in the case of the breads, you can add stuff (like molasses, spices, honey, whathaveyou) without any really plan and it still works out.

I have made variations of those quick breads. But, I would like to make a fancy spice or apple cake!
