Maybe pick something (or several things) from different categories that would develop different skillsets?

Bread: baguette, basic white loaf, wheat bread, ciabatta, focaccia, enriched bread (basically with higher sugar/butter/eggs content like brioche), biscuits, quick breads (breads that use baking soda/powder vs. yeast as leaveners, such as banana bread), pizza dough, breadsticks

Cookies: chocolate chip, snickerdoodles, peanut butter, holiday themed ones like gingerbread and sugar cookies. Also bar cookies.

Cakes: basic chocolate, white and yellow cakes, bundt cakes,

Tarts: strawberry tart, lemon tart, chocolate tart

Pies: apple pie, coconut cream, lemon pie, savory meat pies

Miscellaneous: Pavlova - so delicious!


Highly recommend watching The Great British Bake Off for inspiration as well as fun. The BBC posts a lot of recipes from the show, and while they're not always on the amateur level, they might give you more ideas.

GBBO for ideas is perfect. I never need an excuse to make it.

I've made some of those breads (basic white, yeast, quick breads, pizza dough, enriched [challah]) but I realllllyyyy want to make ciabatta to use as sandwich bread. I think there is a good recipe from Paul Hollywood for that.

I definitely want to make some pies and tarts (will need a tart tin). How is the texture for pavlova?

Pavlova should be crisp on the outside and marshmallowy on the inside. It's basically a giant meringue, and the marriage with fresh fruit and whipped cream is just perfect.
