Can you unsubscribe to someone on DW without unfriending them? And do they get notifications? Have a few people who post things I'm uninterested in, but I don't want to cut them off.

Access and Subscriptions are separate so you can. There's no notif but they might notice on their profile if you're not on their mutual subs list.

You can grant someone access to your journal without subscribing to them, if that's what you mean. They won't be notified but they can see on the manage circle page.

Day late, but if they have a paid account, there is an option to receive notifications when someone removes your from their circle or access list. I believe it's opt in, so I don't know how many people bother to tick those options, but it is there.
