I make "taco meat" that's half veg. Just a lot of finely chopped carrots, mushrooms, cauliflower, whatever I have on hand. It doesn't really mess with the texture, because taco meat, or the taste, because taco seasonings.

Frozen peas are really good to just throw in things. Got some rice cooking? Throw in peas! Got some mac and cheese? Peas! Sauteeing some mushrooms? PEEEEEAS!

I was going to say the same thing. Whenever you have a meat dish (burgers, taco, pie, curry, stir fry, etc) just grate some carrots, potato or broccoli stem or add a handful of chopped sprouts or kale/silverbeet/spinach or anything other vegetables you have on hand.

Vegetables don't have to be a separate element. You can incorporate them into the main cooking of a dish.

Frozen corn is another good product that you can throw into almost anything.
