Trying other techniques will definitely help. Steaming is very healthy, but it's also one of the least flavorful way to cook a vegetable. Get yourself a heavy duty aluminum or stainless steel (NOT non-stick, because the coating can't take high heat) baking sheet for roasting them. You can roast just about any vegetable tossed with some olive oil, salt and pepper, chopped garlic/onion, spices, etc.

Also consider trying out stir-fries, which can be as vegetable-heavy as you want.
