Italian sausage. Real Italian sausage, fresh from the deli counter, thrown on in chunks and allowed to cook while the pizza bakes so that all the delicious pork fat oozes into the sauce and cheese.

get out of here with your freeze-dried squares of sausage or worse (shudder) cased sausage slices.

I don't like Italian sausage on pizza, and your last line there is probably 100 percent of the reason why.

I'd believe it! I haaaaaated sausage on pizza until I had it done right and now I can't get enough, pepperoni can take a hard back seat to it.

definitely a try it situation. when sausage holds a shape that means it's been pre-cooked, frozen or freeze-dried, and then thawed to make a shitty delivery pizza.

MMmm, yes. Real sausage would be my third choice after pepper and onion. The ideal pizza has all three on it.
