My favorites are omelets with asparagus, mushrooms, and gruyere, a croque madame (basically a fancy grilled cheese sandwich with ham and a fried egg on top), and Spam fried rice with two over-easy eggs on top (you break the yolks and it runs down into the rice and is fucking amazing). I like mimosas too, and am an absolute fool for a good breakfast place with bottomless mimosas. Breakfast burritos with bacon, eggs, beans, and rice are great, too.
