The whole water bath thing is only to try to prevent cracking on the top and is not really that important, especially if you are going top it with something. A water bath just makes the heat a little more humid and supposedly makes the heat more even. I don't actually think cracks look bad and they don't affect the taste as far as I can tell. Tinfoil on the bottom of the springform pan is because springform pans come apart and are not water-tight, so you need to keep the water from seeping into the pan (also if your batter is really thin, it might seep out a bit, though I don't think I've ever had that problem with cheesecake).

Thank you so much for this info!!! I used to make cheesecake regularly, and every time I made one where there was a hole in the foil even though I double or triple layer it was the most infuriating thing! My crust is a wet mess and I just wasted a lot of cream cheese. I never understood the fear of the cracks either? I've always liked rustic looking foods anyway.
