I completely believe her about Nagini being a former human, though. Ever since Scabbers, I was prepared for any animal actually being a human. It would actually be weirder to me if she never once thought about Nagini having supernatural origins when writing the original book.

The wizards shitting themselves thing sounds like a joke, though. Is it not?

Harry has foreshadowing dreams and Ron’s made a prophetic joke or two. I think she wasn’t joking.

Even if Nagini is a human, the details surrounding her being a human don't make a ton of sense or add a ton to the setting.

And as far as I can tell the shitting thing is serious? It was definitely tweeted from the official Pottermore account and AFAIK nobody has indicated in any way that it was meant as a joke

Well, I can't agree that the details don't make sense. Or rather, it makes as much sense as anything else in the Harry Potter universe. Which more often than not is, not a lot. It's pretty on par for the storytelling, and any other revelation.

As far as it not adding much to the setting, I guess that's a matter of taste. Rowling has always had a tendency to take little details she dropped earlier and over-develop them. Sometimes, it's interesting. Sometimes, the details were better left mysterious. I can't say I was ever inherently interested in Nagini, but on the other hand, I actually find her one of the more intriguing developments of the new series.. but that's not saying much, tbh, since I find the rest of it pretty boring. I hope she gets more screentime next film, because I can't say I care much about Newt or his gang (except Jacob, lol.)
