I like it when it's weird, or unusual, or closely tied to real-world occultism and esoterica, whether that's kabbalah or alchemy or astrology or what have you - I find RL occultism and esoterica fascinating in their own right. The two authors who immediately come to mind who do magic in a way that's interesting to me are Tim Powers and Patricia McKillip. Neither of them is very systematic, but their magic is still really deeply interesting and cool and aesthetically fascinating and dramatically interesting as well.
