Zelda games: Argorok (the dragon in TP). Goht (the mechanical bull thing in MM) was really fun the first few times, but got annoying for me eventually, with all the stuff it throws at me interrupting my awesome rolling.

Guild Wars 2: I loved the fight against Kralkatorrik in the most recent story episode. Actually, story boss fights really went up a few notches in epicness starting with the latest expansion, imo.

Honorary mention to the dual hands in Super Smash Bros: Melee, because the feeling of finally getting it after over a year of near-misses was such a big “yesss!” moment.
