I think a big part of the double standard of OPs examples comes from this. But I think there's something bigger at play.

We had seasons of build-up showing that Stannis really did love his daughter. There's dozens of scenes showing it. And seasons of build-up of Melisandre manipulating him, tearing apart his relationships with other people, polluting his moral center, pushing him to keep going with the campaign even as it fails repeatedly, etc. So burning Shireen isn't a matter of whether or not Stannis loves her, it's a matter of Melisandre continuing to push their crazy Lord of Light bullshit to ever more horrific heights.

Likewise we get multiple movies showing glimpses of Thanos's relationship with his daughters (and how his version of love affected them). We get both their and his side of the story. And the movies are very explicit that Thanos feels he's doing what's best for the galaxy. It's 100% canon that he loves them.

With Gothel we get one movie, and it's a Disney movie for little kids. It's shallow and there isn't a lot of nuance, because it's aimed at 5 yr olds. So yeah, Gothel is entirely selfish and a villain. Because it's more important to teach kids that her behavior is wrong than to try and delve into narcissism and whether or not any given abuser loves their child.
