Past bake, maybe? Boil up a box of pasta (penne, rotini, whatever you like) and then pour a sauce over it.

Tomato Sauce

olive oil (vegetable oil is fine)
4-5 cloves garlic, chopped
1 onion, chopped
2 28 oz. cans crushed tomatoes
1 8 oz. can tomato sauce
1 tsp. dried oregano
1/2 tsp. dried basil
1/4 cup red wine
1 tsp. salt
pepper to taste

In a pot, saute the garlic and onion in olive oil for a few minutes, then add crushed tomatoes, tomato sauce, spices and red wine. Stir and bring to a boil, then turn heat to low and simmer half an hour or so. Season to taste.

Mix with pasta in a large casserole dish, toss on some grated parmesan if you have it, add a couple giant handfuls of grated mozzarella on top and pop it in a 350 F. oven for maybe 10 minutes or until the cheese melts. You can also stick this in a crockpot, keep it on low at work until needed and add the cheese maybe half an hour before eating.

My fall back is always meat and cheese trays. Always a win, never leftovers.

i made this cake for a holiday party once and i like it so much that i make it any time an event requires me to bring a dish. it's not ultra sweet and everyone usually tries it bc "cannoli cake" sounds interesting so there's not too many leftovers.

i consider it easy bc it just uses a box cake mix (the last party dessert i tried to bake before my cannoli cake era was a sad disaster) but if you're looking to not have to cook at all then my bad!

Watermelon salad.

Cube some watermelon
Tear up some mint leaves
Squeeze some lime in there.
Throw some feta in there.
Salt it a bit
Toss with olive oil

Any 'bread' - banana, zucchini, cranberry, blueberry. I bought two Jiffy blueberry muffin mixes, tossed in a little extra sugar and some fresh blueberries (or you could use frozen), made a nice loaf, and then put a butter/sugar crumble on top. You can just slice it up and then halve the slices and have quite a lot.

'Frosted' grapes - grapes and Jell-O (i used black cherry). Delicious, and everybody loved them at the Xmas party, and very simple and refreshing for summer/warm weather.
