you're not wrong, and add to that out of season vegetables and fruits at the wrong time of year. I routinely watch the price of asparagus fluctuate wildly between $1 an $4/pound depending on the time of year and which country will import it at a marketable price. And then go cut some out of my backyard patch but y'know...

don't even get me started on laminated dough. there are a lot of cooking techniques where it's not the cost of ingredients but the time involved that pushes something from staple into luxury. now that we don't have dedicated cooks spending all day in the kitchen (or wives, for that matter) and can buy quick shortcuts like premade dough, it's kind of blurred the line, but doing it "from scratch" takes so fucking long that I don't blame artisans for wanting to be compensated.

AYRT—I’m jealous you have an asparagus patch! I always wanted to try growing it, but I think I’d have to make an artificial bog or something first. And yeah, local in season stuff is usually better and cheaper, so it’s pretty easy to get good avocados and citrus where I am, but compared to the Pacific Northwest, raspberries and blackberries are shit quality and expensive as hell.
