Yes I thought it was very much implied that nobody had seen Thor in years, not even the inhabitants of New Asgard. Valkyrie even seem to have not seen him much and she's right there.

Every body was affected by the Snap. Bruce/Hulk had his own shit to deal with. And then I would imagine for the first year or two Thor was working between getting the people of Asgard settled into a new place to call home and his PTSD. They had their own demons to deal with, and they couldn't always be there for each other. That's a part of life, even with really close friends.

Caring for each other and not seeing each other in those 5 years are not incompatible at all. There's a ton of practical reasons why visiting or staying in close communication would not have worked out and, a post-snap world, a lot of psychological reasons, too. It looked like none of the original Avengers were seeing each other regularly except Nat and Steve.

I mean, Bruce regularly doesn't see people he cares about for years on end. It's kinda his thing. He likes people intensely for a movie or two, and then goes walkabout and may or may not reconnect with them afterwards. See also: Betty, Tony, Natasha.

I'm not sure if we're supposed to read this as an actual character thing, though judging by the original Hulk movie we possible are, or if the movies just never really knew what to do with him, but ... yeah, that's not really out of character when it comes to Bruce.

It's realistic though. Even if you love someone that doesn't mean you see each other all the time. Thor was a shut-in, too. Even his own people rarely saw him. It's feasible.
