The Burmese place near my house has really nice salad with cabbage and carrots. You can get it with shrimp, chicken, squid, or tofu too.

There are many amazing salads but ever since moving away from Michigan, I’ve been hit with cravings for Maurice Salad (definitely on the indulgent side of salads with a mayo-based dressing, turkey and ham, cheese, and pickles, but it’s not crazy heavy-tasting. Plus you can easily scale back dressing or whatever ingredient is of concern, or sub in lighter options).

Niçoise salad is also pretty awesome for a dinner salad, but it has so many variants! Anchovies/tuna, olives, hardboiled egg, raw (or lightly cooked) seasonal vegetables, tomatoes, olive oil is roughly what goes in... some of them? Most?

For more light appetizer salad: mixed greens, radishes, cherry tomatoes, olive oil, salt, pepper, and maybe some mirin?

Right now, I really like the asian salad mix HEB does. It has cabbage instead of lettuce, along with a bit of kale. I love cabbage. Also carrots, celery, green onion, cilantro, almond slices, and crunchy bits. The dressing is sesame vinaigrette and delicious. I often add chicken or shrimp and mandarin orange slices to it. Added beets a few times.

Spinach salad with all the veg (sweet bell peppers, broccoli, cauliflower, corn, tomatoes, cucumber, carrots) some kind of protein (either meat or egg or both), cheese (sharp white cheddar or feta) pecans, apple, a mix of dried fruit, sunflower seeds (hulled), with a non-sweet vinaigrette dressing.

Alternately - Cobb salad.
Alternately - Waldorf salad.

Watermelon salad: watermelon cubes, olive oil, lime juice, black pepper, feta cheese and mint leaves

Sweet and spicy sashimi salad: maguro (tuna) sashimi, mango slices, seaweed, rice vinegar, sesame oil, ginger juice, sriracha sauce

Scallop salad: baby spinach, seared scallops, balsamic vinaigrette dressing

1) spinach or mixed greens with cucumber (for crunch), bleu cheese, walnuts, dried cherries or cranberries, and raspberry vinagrette. Grilled chicken optional.

2) caprese variation: greens, cherry tomatoes, fresh mozzarella, basil, and balsamic vinaigrette. Can mix with cold pasta.
