But if they can do everything, or even 80% of everything, then they're labeled Mary Sues. It's so hard to win, I'm not surprised that so many media productions don't even try.

Actually, it's really easy to win. All you have to do is include several main characters who are female and have varying personalities. That prevents them from having to represent all women.

I think the last part of your statement will be avoided. The first part would put them in the same situation a a lot of the sillier fans of male characters.
