I bought a mattress that turned out to be too firm, so I added a memory foam topper and it's wonderful.

I tried that. Sweat like a motherfucker every night for six weeks.

I used to have a down mattress topper, but switched to foam because the down would just deflate or move out from under me and provide no cushioning (it was like sleeping on top of a down comforter). Still, that might be an option.

Considering that I expect most regular/spring mattresses to have a layer of foam near the top anyway, maybe you need to look at cooling mattress pads or ones made of thick cotton or wool that can help regulate temperature and wick away moisture.
