Perhaps that explains it. His eyes are always bright even with his hair in his face, so it's easier to notice them/their color.

Ha, maybe! Though at least the eye thing isn't a health hazard (except maybe possibly making him easier to identify by the Empire, not that that ever seems to have happened in the series as far as I know).
