By last two stitches do you mean the two loops on your hook right before you start a new one?

Exactly.

Usual single crochet:
Insert hook in next stitch and pull up a loop.
Yarn over and pull through both loops on hook.

Color change single crochet:
Insert hook in next stitch and pull up a loop.
You now have 2 loops on hook.
Cut the working yarn, leaving a 6" tail.
Fold the new color yarn, leaving a 6" tail, and pull that through those 2 loops.
Tie the two tails together in a bow to keep them in place and proceed as usual.

The logic there is that the last 2 loops are always stitched over on the next row/round, so the color change is least likely to show if made on those last loops.
