What? There are still a billion characters who are single/unmarried/unconfirmed! JK even said so herself that she didn't want to pair everyone up. Blaise, Dean, Seamus, Justin, Lavender, Romilda, Kingsley, and the list goes on...hell, she even confirmed that Charlie didn't get married.
I could argue that that's exactly what she gave fans of the pairings involved.
No, she put together pairings she had planned from day one and then tossed in a few others with random people for the hell of it. Ginny/Harry was hinted from CoS, Hermione/Ron was hinted from PS/SS, and pairings like Draco/Astoria, Luna/Rolf, and Cho/MuggleDude can't be "fan-service" since no one knows who the hell their SOs are. And George/Angelina was just creepy.
