Soul Bossa Nova (associated w/Austin Powers but not originally written for that movie)
YYZ and La Villa Strangiato by Rush
many, many classical and jazz pieces
Jessica was already mentioned and I love that song but the Allman Bros did a lot of other great instrumentals
Outa Space by Billy Preston
Frankenstein by Edgar Winter (the song is called Frankenstein because it's a bunch of riffs stitched together)
Green Onions
Underture from Tommy by the Who (Tommy was an album way before it was a movie)
I would include Mexican Breakfast but I think that's from an OST
damn, forgot Bad Penny Blues!

I'm really not into instrumental tracks. Lyrics are where it's at for me. But I do really like The Winner Is by DeVotchKa, and Dead Island Theme by whoever composed that. It really does make everything sad. :P

along those lines I sort of think of Weapon of Choice as sort of a semi instrumental because it has lyrics but they're just sort of incoherent mumbling.

a lot of it's just using the voice as an instrument and there's no need for actual words.

I'm super grateful to them for putting out Unleashed with both vocal tracks and instrumental-only versions because I highly prefer the instrumental versions of Run Free and Molto Piratissimo.

especially Molto Piratissimo!

Ooh yes to instrumental tracks! I'm always collecting them, they make perfect background music for writing fantasy. Happy to cull out things from movie soundtracks.

Anything by Two Steps from Hell (listed my favorites in a comment above)
Most anything by Audiomachine, with favorites being Black Cauldron
Wings of Icarus by Celldweller
All or Nothing by BrandX Music
Hope and Redemption by Cheryl Engelhardt
Dreamchasers and Aqua Vitae by Future World Music
Transcendence by Lindsey Stirling
My World by Tunes of Fantasy
The Guardian by White Wall
Anima Dolores by Thomas Adam-Haduba

...now I'm just going through my long itunes list haha. Didn't even start counting classical music yet!
