Dwarfs know there are male and female dwarfs. They just do not talk about it. Ever. All dwarfs present as small, hairy, bearded, and in chain mail/leather/with huge axes.
Male and female are outwardly basically identical. But Dwarfs are *well aware* that some are different under the beards and chainmale, and het Dwarves spend a lot of time in delicate courtship trying to figure that out.
They may not use or say she/her much (or at all) traditionally, but they are well aware she/her Dwarfs exist. (And Cherry, among others, is challenging and changing the notion and making people use she/her.)
