Have you tried a simple v-stitch? I made a v-stitch scarf for myself recently and it turned out really well. Comfy and warm.

I've found if you want crochet blankets/scarfs/etc to be less stiff you can just use a larger hook. I'd only change hooks for simpler flat items as you will have to adjust the pattern to compensate for the larger hook/stitches. A 5.00mm hook is my favourite general purpose hook.
