To be fair, I expect a lot of that is pushed by producers. It makes for more easily digestible television if casual viewers can identify each contestant in simple and contrasting terms.

This is true. I think that's always been the case with the Bake Off... someone hired by the show is behind the scenes helping bakers develop ideas for their bakes and gently encouraging them to go in a certain direction. I think this was more subtle back when GBBO was still at the BBC and I think it's getting more obvious now.
