Maybe because the authors are most interested in those 1-2 people and not the dozen or so single characters. People are going to write about the characters they like and have an interest in exploring.

But in series where the supporting characters are well-written and every bit as much of a "good character" (if not better than) the main characters, this doesn't make much sense.

What if the author ended it by pairing the spares as well?

Seriously, that's a bit hypothetical to be a good arguement. If a person likes character A, they like character A, dangit. People don't write non-canon pairs to spit in the face of the author or anything; they write it because there was something in the interaction of those two characters that they found interesting.

Or sometimes because the characters are hot together, but I usually ignore that one (because nine times out of ten, my favs aren't hot and get ignored anyway).

Yeah, but it's going to be subjective who the person is interested in writing about. You could think a supporting character is wonderfully written but still be more interested in reading a romance about different characters. People write the pairings they like usually, not which pairings don't require a break-up or cheating.

Well, in most decent series, the supporting characters are going to be interesting in their own rights too.

Objectively, yes. Subjectively, no. A person's favorite character is their favorite character. Period. You can point out that hey Character X is just as well written and interesting as character B, but if someone likes Character B the best, and finds him/her most interesting then THAT's who they're going to write about. Arguing that some other character is just as interesting isn't going to fly because while that character might be interesting to YOU and to others, s/he might not be quite so cool in the eyes of the authors who are writing Character A/Character B fic.

For instance, I don't like Sylar from Heroes. I find him painfully boring. Always have. I like Adam more. Fandom at large loves Sylar. I could say "hey guys, Adam is interesting too! Why don't you write about him?" But that would be terribly entitled of me because those people don't like Adam as much as I do and CLEARLY have a preferance for Sylar. And that's fair. They have a right to love and write about whatever character they want, even if I find him as dull as dirt.

I'm currently watching season 1 of Heroes. The only way I stay awake through Sylar and Mohinder is by mentally chanting "BBBBBBRRRRRRAAAAAAAAIIIIIIINNNNNNNSSSSSSS!!!!!!" (Actually, I'm not sure my posts on the series have anything but that in them...) I knew, of course, that fandom was lying to me about how they were totally sleeping together, but I thought surely they would at least be somewhat interesting.

The thing is, though, that when people get sunk deep enough that they view the property the way you describe, they often seem to build their character up until the role is twice as big and important as it actually is, and it's difficult to have any discussions because everything is through the lense of that character, and often Just Don't Get why you don't want to talk about just that character, too. (Mind you, I tend to be more into anime/manga than anything else at most times, and that's even worse about that than other fandoms, especially with certain character types that bore and/or annoy me.)

Really, though, I just don't get fixating on a certain character or pairing in ensemble things. They're usually such minor things in the grand scheme of things that it usually seems to be a "mountain out of a molehill" thing. That causes needless wank and frustration.
